PB n’ Date Granola
An extra special custom granola loaded with natural peanut butter, naturally sweet dates, roasted peanuts, and dark chocolate, drizzled with more dark chocolate and flaky sea salt to make every spoonful better than the next.
Ingredients
- 2 cups
Kellogg’s® Granola w/o Raisins, divided
- ¼ cup
Peanut Butter
- 12
Medjool Dates, chopped
- ¼ cup
Roasted Peanuts, chopped
- ¼ cup
Dark Chocolate Chips
- 3 Tbsp
Honey
- 1 each
Egg White
- 3 tsp
Vanilla Extract
- 2 Tbsp
Dark Chocolate Syrup
- 1 tsp
Flaky Sea Salt
Directions
- Preheat oven to 325°.
- In a food processor, pulse 1 cup of the granola into a fine dust. Combine processed granola with remaining granola in a mixing bowl.
- Using a rubber spatula, gently fold in peanut butter, chopped dates, chopped peanuts, dark chocolate chips, and honey to the granola mixture.
- In a separate mixing bowl, whisk together egg whites until light, fluffy, and beginning to foam. Add the egg whites to the granola mixture and gently mix granola until coated evenly.
- Spread the granola evenly over a half sheet baking pan lined with parchment paper that has been lightly treated with cooking spray. Place another sheet of treated parchment paper over the top of the granola mixture and press down firmly to compress.
- Remove the top layer of parchment paper and bake for 15 minutes, or until lightly golden brown.
- Remove granola from the oven and gently press the surface again with a spatula, to make sure it holds together.
- Allow granola to cool down to room temperature, then lightly drizzle the surface with dark chocolate syrup and sprinkle with flaky sea salt. Place in the cooler overnight to allow to completely set and firm up.
- Once set, carefully remove your granola from half-sheet pan and cut into 3" x 3" squares before serving.
