Cardamom Cinnamon Granola Bar
Cozy up to fall flavors like cardamom, vanilla, honey, and maple in this easy-to-eat bar, all folded into crunchy granola and cinnamon rice cereal with toasted almonds and a dairy-free almond milk glaze.
Ingredients
- 2 cups
Kellogg’s® Granola w/o Raisins, divided
- ½ cup
Cinnamon Kellogg’s® Rice Krispies®
- ¼ tsp
Ground Cardamom
- 2 tsp
Vanilla Extract
- ¼ cup
Almonds, crushed
- ¼ cup
Cashew Butter
- ¼ cup
Maple Syrup
- ¼ cup
Avocado Oil
- 2 Tbsp
Almond Milk Glaze
Directions
- Preheat oven to 325°.
- In a food processor, pulse 1 cup of the granola into a fine dust. Combine processed granola with remaining granola in a mixing bowl.
- Add cardamom and cinnamon rice cereal to the granola mixture.
- In a separate mixing bowl, whisk together vanilla, cashew butter, maple syrup, and avocado oil until mixture comes together and all ingredients are combined.
- Using a spatula, fold the wet mixture into the granola until evenly coated.
- Spread the granola evenly over a half sheet baking pan lined with parchment paper that has been lightly treated with cooking spray. Place another sheet of treated parchment paper over the top of the granola mixture and press down firmly to compress.
- Remove the top layer of parchment paper and bake for 15 minutes, or until lightly golden brown.
- Remove granola from the oven and gently press the surface again with a spatula, to make sure it holds together.
- Allow granola to cool to room temperature in the pan then place in cooler overnight to set.
- Once set, carefully remove from the pan and cut into 3" x 3" squares before glazing.
