Berry Banana Morning

Mornings and snack times are fun again with these banana and blueberry muffins, which are topped with a crunchy layer of Kellogg’s® Rice Krispies® and baked to perfection.

Ingredients

  • 1 ½ cups

    Wholegrain Blueberry Muffin Mix

  • 2 each

    Eggs

  • ½ cup

    Vegetable Oil

  • ½ cup

    Water

  • ¾ cup

    Frozen Banana, chopped

  • 1 ¼ cups

    Kellogg’s® Rice Krispies®

Directions

1.Heat oven to 400°F on the convection setting. Line muffin pan with liners or lightly grease. Drain and rinse blueberries from mix in cold water; set aside.

2. Stir together water, oil, eggs, muffin mix, and bananas, until blended. Gently stir in blueberries. Fill muffin cups 2/3 full.

3. Prior to baking, spread 1 Tbsp of Rice Krispies to coat the top of each muffin, creating a mound in the center which will disperse during baking.

4. Bake at 400°F for 16 minutes.

5. Transfer to a wire rack to cool.

6. Serve immediately, or transfer to an airtight container for service.
