Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups Kellogg's® Frosted Mini-Wheats® Bite Size cereal
  • 1 1/2 cups mashed ripe bananas (about 4 medium bananas)
  • 3/4 cup fat-free milk
  • 2 egg
  • 1/4 cup vegetable oil
  • 1/4 cup chopped walnuts

Directions

1. In small mixing bowl, combine flour, sugar, baking powder, and salt. Set

aside.

2. In large mixing bowl, combine crushed KELLOGG'S MINI-WHEATS Frosted Bite

Size cereal, bananas, and milk. Let stand 3 minutes or until cereal softens.

Add eggs and oil. Mix well. Add flour mixture and nuts, stirring only until

combined. Spread batter evenly into 9 x 5 x 3-inch loaf pan coated with

cooking spray.

3. Bake at 350° F about 1 hour or until wooden pick inserted near center comes

out clean. Cool 10 minutes on wire rack before removing from pan. Cool

completely before slicing.
